One leek and Tattie soup to Rule them all

As the tiresome Onion Rings of Power series drones on, at least in episode five we actually got some action, well sort of. The onion rings of power really is dismal, isn’t it? A lot like the financial crisis, actually, both leave you with the same feeling. Unengaging and flat, you're left thinking can it really cost that much?

 

No matter, here on the blog today I’ve got an easy soup recipe, suitable to be seasoned with salt from the shire, that is really easy to make and has become a staple in my home cooking repertoire. It's also relatively cheap to make, especially if you can find the veggies reduced, like I did today. So you can fill up on comfort food this winter, even if you have to eat it wearing two coats and a blanket with a pair of gloves on. I can’t fix the heating bill, but I can help in other ways.

Easy Leek and Tatie Soup

 

Ingredients:

 

  • 1 large Onion
  • 1 Leek
  • 2 Medium Potatoes
  • 2 Cubes of Chicken Stock
  • 1 Dash of Cream
  • 1 TBS of chopped Thyme
  • 1 TBS cracked Black Pepper

 

Method

 

Fry the onion and leeks together and reduce the heat to let them sweat.

 

Add cubes of potato after 10 mins, two litres of water and two chicken stock cubes,

 

Bring to the boil and then reduce the heat. Cook for 20 minutes.

 

Take soup off the heat, add Thyme and Black Pepper.

 

Blend with hand blender. Add dash of sour cream and stir, salt and pepper to taste.
